From morning juice to evening cocktail, High Note’s celery juice recipe will be your go-to summer drink.

This spring, Kerbey Lane Cafe launched High Note, a “healthy, boozy” restaurant on South Lamar Boulevard. While there are hints of the beloved Austin institution on the menu, High Note is separate from the café chain and caters to healthy lifestyles, including Whole30, paleo, gluten-free and ketogenic diets. 

“We want to be a place where you can come after a quick run on the trail or tough workout and order something healthy but also have the option to make it boozy, depending on your mood,” CEO Mason Ayer says.

From vegan queso and butter coffee to bone broth and quinoa, High Note’s offerings include a wide range of healthy options that cover all the Insta-friendly health trends. And what 2019 health-forward menu would be complete without celery juice? Whether you’re jumping on the trend to see if the juice really helps reduce anxiety or if you’re just looking for a healthy summer drink, you can now try it at home. We’re sharing High Note’s recipe plus tips for making it boozy to transition your post-workout fuel to a refreshing cocktail. 

Celery Juice Cocktail

Ingredients

1 ounce celery juice

1.5 ounces soda water

3 ounces ginger beer

1/2 ounce freshly squeezed lime juice

Directions

1. Cut off the base and top of the stalks from a large bunch of celery.

2. Run the celery through a juicer. 

3. Combine the celery juice, soda water, ginger beer and lime juice into a cocktail shaker and mix. 

4. Pour the mixture into a chilled glass and add ice. 

5. Garnish with a celery leaf, candied ginger and lime. 

Make it boozy: Add 1.5 ounces of tequila when combining the other ingredients and pour the cocktail into a chilled Collins glass.
